Can I control what is sync'd with a smartphone?
If I use a phone like a Motorola Q or a Treo 700p and get my email through my company's email server, will I be able to limit what things entered in my phone's calendar and which contacts I have in outlook get synchronized?

I don't use these apps, but I'd say it is not possible. However I think you can filter the synced mails by size.

Welcome to Brighthand, paulcomi. That is not possible using the factory installed apps. There may be third party apps that will allow you to; let's see what others have experience of.

PocketMirror from Chapura.com has several versions for more control of Outlook sync on the 700p.
DT Lives in SFO...away from flying objects.

If you are syncing the Motoroala Q, you can choose whether to sync calendar items and/or contacts, but not specific categories of these.

With Windows Mobile 5 devices, you can't select to sync via categories. However, WM5 only syncs the top level folders. So you can move contacts, calendar items, tasks, notes etc. to lower level folders and they wont get synced.
With e-mail sync, you can select to sync on size as well as which folders to sync.
