Open iTunes on your PC and attach your new iPhone by USB. iTunes will recognize the new device & ask you if you wish to restore the device from the existing previous data. Say yes and your stuff will be installed.
Experience is what you get when you thought you were getting something else.

note, this only works if you actually use iTunes as a backup for your iDevice; if you only buy songs OTA (direct to the device) you are out of luck, although apps can be re-downloaded for no additional charge. I know this is true, based on the experience one of my sons had.

Yes, and I'm pretty sure that's also stated in the iTunes policies that you click to agree to before using the store. I understand that it can be quite frustrating for some people, but nonetheless it is really the record companies breathing down Apple's collective neck that forces them to adopt policies like this - I hope people remember that, usually, it isn't Apple's choice.

I always recommend "Don't use your iDevice as your only copy of anything." This is not a comment about the reliability of iDevices (which is fine), but rather a comment about the fact that they were never designed to be secure long-term storage, and it is unsafe to use them for that purpose. Besides that, having only one copy of any digital file is dangerous, no matter where that copy is stored.

This is a reality even off-topic the iThings. No mobile device can be considered a safe storage resource. The very nature of being mobile intended makes it likely to be a risky depot of information. Moreover, you're also right in that a single copy of any form of information of relevant interest is a dangerous practice as well.

can't say I totally agree, hal; other than an NVBackup of my data, on more than one SD card, thats it for me. I don't HotSync (didn't do that much, or well, even in the old days...).

to the topic of the thread, though, my handhelds do not not hold the only copies of my music.
