In my opinion, "sound quality" is really too much a matter of personal preference - you've just got to listen to the different options yourself and decide what you like best. I'm definitely not an audiophile and personally I'm happy with a pair of $20 behind-the-head Sony's which you can get almost anywhere. They're light, the sound is good enough for me, and I don't feel bad when they get abused because they're cheap.
However, if you're an uncompromising kind of individual, I've heard that Etymotic Research has an offering for those who can't live with anything but the high end.
As for bluetooth headphones, I'm not aware of any such products on the market yet, but even if there are they won't work with any current-gen PPCs, as none of them yet support the audio profile.

I like the Koss Porta Pro series. Light, but big bass. www.koss.com
